February Amber

The amber brewed in February turned out well.  We had a lot of family down, and once they tried it, they pulled on the keg like a freight train and did some damage.. lol  but it survived.   I think I will tweak the next one with the flavor hops a bit, maybe a different variety and a little more.  This one took a full several weeks to age properly.  Down here in the steady warmth, fermentation is usually fast and some brews age quickly as well, drinkable as soon as they cool.  Some take longer, but this one was worth the wait.  Would love to just throw a batch in the fridge and let it sit for a month, but not there yet.  Too much demand for the product.

Looked at conical fermenters but from reading about the, probably not worth the benefits.  Ready to bring in the next batch of ingredients, but have to put one together first.
